Healthy lunch: scrambled eggs variations
I’ll just come out and say it: I’m a breakfast person (18-year-old me would not believe this in a million years). However, I’ve been developing my love for lunch lately. I never used to like eggs before, now I love them – especially for lunch! Here are some of my favorite scrambled eggs recipes I had in the past week or so.
Sweet & savory
Scramble two eggs with a big handful of spinach, serve with 1-2 slices smoked salmon, half an apple, a small piece of goat’s cheese and a few walnuts.
Healthy zucchini-date bread
Doesn’t sound very tasty now does it?! Well, let me tell you: this bread is very tasty! Even though there is no sugar in this, it tastes quite sweet – almost like cake! At least I thought so… but what do I know about sweetness anymore? ;) Anyway, about this zucchini bread: don’t knock it till you try it! Seriously! And did I mention how healthy it is?
Raw cashew-coconut-chocolate balls
I like to snack. Preferably on sweet things. Which used to be kind of a bad habit – until I changed my lifestyle and started eating healthy. I rarely crave anything super sweet anymore, can you believe it? But when I do, there are tons of healthy options; like these yummy little creations! Raw, no-bake cashew-coconut-chocolate balls. Pink breakfast
I’ve got a cute colored recipe for you guys! Last week I decided I wanted to make pink pancakes, so I gave that a try! Too bad they didn’t turn as pink as I had hoped, but they’re still pink (ish), right? ;) (I was aiming for something bright like this, better next time!) Anyway, they tasted really good, so on to the recipe!
